Our story

A family kitchen that never learned to cut corners.

Tacos Jalisco opened on Sonoma Blvd in 1986 and has been run by the same family ever since. The recipes travelled here from Jalisco, and they haven't been simplified for anyone: birria still braises for hours, salsas are made in-house each morning, and the tortillas come out warm because that's the only way they should arrive.

Come in for a quick lunch or bring twelve people for dinner. Either way you'll get the same generous plate, the same welcome, and the same food that has kept Vallejo coming back for four decades.

Honoring Our Founder: Martha Rubio’s Journey

Founded by Martha Rubio, Tacos Jalisco began with a dream, determination, and a love for authentic Mexican cuisine.

Originally from Unión de Tula, Jalisco, Mexico, Martha brought her passion and traditions to California, opening Tacos Jalisco in Vallejo in 1986. Her dedication has shaped the restaurant into a beloved community gathering place for generations.

Since 1986, one family has run this kitchen — through three generations of Vallejo regulars, birthdays, quinceañeras and ordinary Tuesday lunches. The recipes haven't changed. Neither has the welcome.
